Hello my Cork Coven and a happy Summer Solstice to y’all! Summer Solstice is the longest day of the year so why not eat and drink some of your favorite things while being happy in the sun all day. If you’re anything like me and love the heat and the sun but I also understand wanting to run away into the AC, but if you have refreshing snacks and thirst quinching vino then anything is possible. I am truly blessed and have a gorgeous sun porch that I practically live in that brings in the best breeze and makes me feel like I am in a tree house. I am also truly blessed because I have a bestie who is a chef, and she introduced me to the most delicious snack that tastes like summer. For my tomato lovers.

SO since today is the longest day of the year let’s eat and drink something that we wouldn’t ever want to run out. Get the biggest plate you have and the biggest bottle of wine you have << 1L are my favorite personal size, but a magnum 3L and jeroboam 4.5L will make you the coolest kid at the party>> Grab your yellow tomato, red onion slices, avocado, cottage cheese with some red wine vinegar, olive oil, s&p drizzled over top and dive in– it screams summer and will definitely cool you off and won’t make you feel bloated and heavy! Today we have a 1L of Pullus Halozan White Blend from Slovenia. A beautiful blend of Riesling, Chardonnay, Pinot Blanc, Welschriesling, Furmint, & Muscat. This wine is dry but full of fresh flavor. She gives us fresh summer fruit flavors like apricot, peach, pear, lemon citrus and gorgeous light summer aromas of chamomile, white flowers with some hints of salinity to balance it all out. For all my white wine lovers this goes down way too easily so make sure you have enough bottles on hand cus you won’t get tired of this one. This wine worked so well with this delicious lil snack because its wonderful acidity complimented the juiciness in the tomatoes while the softness of the wines flavors balanced out the tang of the red wine vinegar and the creaminess of the cottage cheese. A very pleasant pairing! Other recs for Summer Solstice sips would be Gruner Veltliner << pictured below with my beagle Ollie on our patio>>, Sparkling Rose, or a light chillable bright red wine like Frappato or Beaujolais.

I woke up today and truly felt Mother Nature working her power for us to be able to soak up every moment of this years Summer Solstice. In Kentucky it has not felt like summer due to it being rainy here for literal weeks, but today she decided to give us the most beautiful summer day of sunshine, a nice breeze, and ever so slight cloud coverage and a glimmer of hope that summer is here in the Bluegrass! I hope you find the time to embrace the Summer Solstice today. Enjoy this combo if youd like, or whatever combo makes your little hearts happy, outside soaking up the suns strength and warding off all the darkness we no longer need in our lives. If you prefer to be in the AC then throw on a cute beachy, naturey, or vibey ambiance on your tv and be transported somewhere else for the moment. The Summer Solstice helps us center ourselves and live in the moment. So gather your friends, or enjoy some solo time to reflect, in the grass outside and sip and snack while grounding yourself in nature. Plant some new intentions for the rest of your summer, do a tarot reading if you need some guidance, or simply right yourself a little note of things you might want to manifest.
